  • 3 cups mayo

  • 1/4 cup lime juice

  • 4 heads garlic

  • 1/2 4 oz can of chilis in adobo

  • salt to taste


  1. Place garlic, lime juice, and chilis in adobo in a blender

  2. Blend until smooth

  3. Pour mayo into a size-appropriate bowl

  4. Add chipotle puree to the mayo

  5. Mix until smooth

  6. Add salt to taste

Chef's Notes:

This recipe was inspired by a trip to Spain, where I went to this Taqueria in Madrid. They served this sauce on all of their tacos and it was the flavor I needed whenever I was in need of spicy food. The best thing about this aioli is its versatility. We like to use it in our breakfast burritos, in place of mayo on sandwiches, as a salsa on tacos or rice bowls. The options are endless…
